Aged Black Sesame Oil (3 years)
Sesame oil is one of the cornerstones of Taiwanese cuisine, lending depth and richness to dishes as simple as a fried egg to slow cooked stews to the iconic three-cup chicken. As with any cuisine, the quality of the ingredients is key. This aged black sesame oil comes from a fourth generation producer using a traditional labor intensive process from sesame roasting to cooling to pressing and filtering. They use only organic sesame grown by nearby farmers in Tainan county and, to create a distinctive flavor, the sesame is roasted using fire built on either longan wood or lychee wood, depending on seasonal availability. After the roasting process, the sesame is slow pressed to produce sesame oil that is then triple filtered and subsequently aged for 3 years.
Similar to fine teas, this aged black sesame oil does not have a strong fragrance before cooking but once heat is applied it blossoms and develops a complex nuttiness with a pleasant hint of bitterness that is commonly found in traditional Chinese herbal medicine. This unique sesame oil is not recommended for cold applications, such as cold noodle dishes, salads or pickles but rather should be reserved for hot applications, such as braises, soups, stews or sautés.
